>Father’s Day Tribute & Campfire Chicken and Strawberry Salad

Happy Father’s Day to all out there in Blogger Land. I’m especially grateful to my father who instilled the love of outdoor pursuits in me…bird dogs in particular! My father recently retired from 36 years of general medical practice. He was one of the last dinosaurs of his time! He delivered thousands of babies including my oldest! I’m very proud of my father for his dedication and altruism to his patients and all the public he served! Congrats Dad on a long and wonderful career! Enjoy your retirement!

Campfire Chicken and Strawberry Salad


Ingredients dressing:

2 tablespoons of orange juice
1 tablespoon olive oil or salad oil
1 tablespoon lemon juice
2 teaspoons sugar

Combine ingredients in a sealed container and shake well. Chill until serving time.

Ingredients marinade:

1/4 cup soy sauce
2 green onions, thinly sliced
2 tablespoons orange juice
1 garlic clove, minced

Combine ingredients in a plastic bag and add chicken (or grouse or quail breasts are yummy too!) after rinsed and dried with paper towels. Chill for a minimum of 2 hours and turn the bag frequently. Grill chicken directly over the coals at medium heat until properly cooked. I like to add the marinade onto the chicken while it cooks. Slice the chicken and add to the salad!

Salad ingredients:

4 cups spinach leaves
1 11-ounce can mandarin oranges, drained
1 cup sliced strawberries
+/- blueberries to taste
